Sergio Loon Farm sits upon the great Mount Apo, the Philippines' highest peak, in the highlands of Bansalan, Davao Del Sur. There, our friend Lendilou Loon, Sergio’s daughter, refines her experimental post-harvest processes, like this wet-hulled Arabica.

Also known as giling basah, the process was developed by Indonesian producers to address challenges that high moisture environments present to the drying process. The anaerobic fermentation that occurs creates a flavor characteristic of our tropical Southeast Asian terroir.
